I don’t know about you, but I sometimes struggle with eating enough vegetables and leafy greens each day. While I am perfectly aware just how important and beneficial they are for my body, eating large quantities of them can get repetitive and downright boring. Because of that, I have recently been playing around with various ingredients to create new dressings that make me excited again about eating my salads every single day. Below you will find my favourite product of the dressing experiments that I am sure you will enjoy too. If you do, or would like to suggest improvements to the recipe, please let me know in the comments below 🙂 Stay tuned for an article in the near future about the biochemical reasons why olive oil and vegetables are a match made in heaven for your body!
INGREDIENTS
- Good quality extra virgin olive oil
- Good quality balsamic vinegar
- Pomegranate molases
RECIPE
I have found that mixing the ingredients in a 2:1:1 ratio of olive oil:balsamic vinegar:pomegranate molases works best for this dressing. Feel free to experiment a bit with the proportions though and let me know if you have added something else to this dressing that made it even better 🙂
I particularly love to use this recipe with a salad made up of rocket and thin red bell pepper as well as red onion slices (as shown in the top picture). The bell pepper provides a bit of sweetness while the red onion gives the salad a sharp kick. What is your favourite salad mix?
