I would like to wish everyone an amazing, productive, sporty and heathy 2021 with this yummy recipe I have recently been playing around with. It’s fantastic as a little healthy side with any meal and importantly, it’s absolutely delicious!
INGREDIENTS
- 200 – 300 grams of sliced kale, without the hard stems
- 8 cloves of garlic, finely sliced
- freshly squeezed lemon juice, to taste
- salt, to taste

RECIPE
- add a bit of water and a splash of olive oil to a large frying pan and heat it up on medium heat
- you will need a large pan as the kale initially takes up a lot of space and then drastically reduces in size as it is fried

- keep frying on medium heat until the kale starts to reduce in size. Add more water if necessary to prevent the kale from burning
- add the lemon juice and the salt
- when the kale starts to lightly brown, add the finely chopped garlic and fry until the garlic just becomes orange/brown to avoid the bitter taste
- enjoy!
