A healthy way to start 2021 – fried kale with garlic and lemon

I would like to wish everyone an amazing, productive, sporty and heathy 2021 with this yummy recipe I have recently been playing around with. It’s fantastic as a little healthy side with any meal and importantly, it’s absolutely delicious!


  • 200 – 300 grams of sliced kale, without the hard stems
  • 8 cloves of garlic, finely sliced
  • freshly squeezed lemon juice, to taste
  • salt, to taste


  • add a bit of water and a splash of olive oil to a large frying pan and heat it up on medium heat
  • you will need a large pan as the kale initially takes up a lot of space and then drastically reduces in size as it is fried
  • keep frying on medium heat until the kale starts to reduce in size. Add more water if necessary to prevent the kale from burning
  • add the lemon juice and the salt
  • when the kale starts to lightly brown, add the finely chopped garlic and fry until the garlic just becomes orange/brown to avoid the bitter taste
  • enjoy!
