I hope you will enjoy these as much as I do (sometimes a little bit too much!). They are very easy to prepare and keep well in the fridge for a couple of days. The potatoes also taste amazing with a homemade garlic sauce (the recipe for that one will be posted soon)!
INGREDIENTS
- 4 large baking potatoes
- olive oil
- 10 garlic cloves (finely chopped or pressed)
- freshly squeezed lemon juice (quarter of a lemon)
- paprika powder
- dried oregano
- chilli sauce
- salt
RECIPE
- cut the potatoes up into small cubes and place in a sufficiently large bowl
- drizzle with olive oil to make sure they are well covered with it (to prevent the potatoes from getting burnt) but are not swimming in it
- add the garlic, lemon juice, paprika powder (in my experience at least half the small jar), a bit of oregano and chilli sauce and salt to taste
- mix contents of the bowl well ensuring even distribution of the spices (TIP: use kitchen gloves to prevent your hands from getting very messy)

- when you are mixing the bowl contents, you can add a bit more of olive oil if you think the potatoes are a bit too dry
- place the potatoes into a large baking tray and bake for at least 40 minutes at 180°C

- serve with your favourite meat or veggies and enjoy! 🙂
